Le Manoir tops Fish2Fork.com ratings

Le Manoir aux Quat' Saisons has soared to the top of sustainability champions Fish2Fork's league table of responsible restaurants. Following the launch of the Fish2Fork.com website, and press coverage of their objectives and processes, Raymond Blanc and Gary Jones, Executive Head Chef of Le Manoir aux Quat'Saisons, took the decision to clarify their policy on the sourcing and serving of fish at Le Manoir.

Mr Gary Jones, Executive Head Chef at the multi-award winning restaurant, said:

“We do a lot to ensure sustainable and ethical purchasing. We haven’t in the past made a fuss about what we are doing but we think now is the right time to do so. We have updated our website to include more information on what we have done and we are adjusting our menus so that they show clearly if a fish is wild or farmed. If it is wild we also describe the methods used to capture it. We thought we were doing all the right things but we are glad you came along to remind us that you can always do more.”

Le Manoir now achieves the highest rating on the Fish2Fork.com website, with four blue fish out of a possible five.

Latest news: Brasserie Blanc has now also received a positive rating of three blue fish on Fish2Fork. Congratulations to the team at BB!
