THE ZETTER HOTEL
The 59-room hotel was opened in March 2004 by partners Mark Sainsbury and Michael Benyan (who also collaborated on Moro restaurant in Clerkenwell). A converted Victorian warehouse, the site was previously a football pools company of the same name. Eco-conscious hoteliers, they have used energy-saving and eco-friendly materials where possible, including water pumped from the hotel’s own 1500-foot bore-hole beneath the building to both support the air-conditioning system and supply the restaurant’s bottled spring water.
