November 2012 - PUMPKIN RISOTTO

We are staying with pumpkins for the rest of November, since they are such a delicious and seasonal vegetable. My own favourite variety of pumpkin is Ironbark, It is the best variety and delivers a true experience that no other pumpkin can. Be careful not to undercook the pumpkin,as you will not extract its natural sweetness and flavour.
