April 2012 - GREEN PAPAYA & POMEGRANATE SALAD WITH A CHILLI & LIME DRESSING
This salad is inspired by my travels to the far east, where I experienced a cuisine of light, healthy, oil free salads such as this one from Thailand. It has the perfect balance of sweet, salty, sharp and herby with contrasting textures that make this one of my favourite simple dishes. And as a bonus the papaya is a nutrition powerhouse – the perfect raw food.
